Three Bean Veggie Chilli

Ingredients
1 Red Pepper, finely chopped
1 Yellow Pepper, finely chopped
1 Onion, finely chopped
1 Jalapeno Pepper, finely chopped
2 Stalks Celery, finely chopped
Vegetable Oil, as needed
2 Garlic Cloves, finely chopped
400 g Corn, drained
800 g Chopped Tomatoes
400 g Pinto Beans, drained
400 g Black Eyed Beans, drained
400 g Red Kidney Beans, drained
2 tbsp Chilli Powder
1 tsp Salt
1 tsp Coriander
1 tsp Cumin
Black Pepper, to taste
Method
In large pot sauté all vegetables excluding the garlic in oil until the onions start to look transparent.
Add garlic and sauté together for 2 minutes.
Add all remaining ingredients and let simmer on the stove for 1 hour stirring regularly.
Server with boiled rice.
