| Vegetable Curry |

| Ingredients |
| 1 tbsp Vegetable Oil |
| 1 Onion, finely chopped |
| 2 Garlic Cloves, finely chopped |
| 2.5 tbsp Curry Powder |
| 2.5 tbsp Tomato Purée |
| 400 g Chopped Tomatoes |
| 300 g Frozen Mixed Vegetables |
| 350 ml Vegetable Stock |
| Salt, to taste |
| Black Pepper, to taste |
| Coriander, to garnish |

| Method |
| Heat the oil in a pan over medium heat. |
| Sauté the onion and garlic until golden. |
| Stir in curry powder and tomato purée cook for 3 minutes. |
| Stir in tomatoes, mixed vegetables, stock, salt and pepper to taste. |
| Cook until vegetables are just done. |
| Adjust seasoning. |
| Sprinkle with fresh coriander prior to serving. |
