                        | Spinach and Cheese Curry |

                    | Ingredients | 
                        | 250 g Fresh Spinach | 
                        | 250 g Cheddar Cheese | 
                        | 1 tbsp Vegetable Oil | 
                        | 3 Onions, finely chopped | 
                        | 3 cm Ginger, finely chopped | 
                        | 1 Tomato, finely chopped | 
                        | 1.5 tsp Cumin Seeds | 
                        | ½ tsp Turmeric | 
                        | 1 tsp Chilli Powder | 
                        | 2 Cloves | 
                        | 1 tsp Nutmeg | 
                        |   Mace | 
                        |   Salt, to taste | 
                     | 
                    | Method | 
                        | Cook the spinach in a little water and then chop it up. | 
                        | Cut the cheese into 1cm cubes and fry a few pieces at a time in the oil. | 
                        | Next fry the chopped onions in the oil for 2 minutes.  | 
                        | Add the ginger and turn heat to high. | 
                        | When the onions are golden reduce the heat and add the tomato | 
                        | Add the spices. | 
                        | Cover for a few minutes then add the spinach and salt | 
                        | Cover and simmer about 5 minutes to let spices penetrate. | 
                        | Add the cheese pieces mix and serve. |
